      Whole Allspice (Pimienta Dulce Entera) has a flavor and fragrance that is a pleasing combination of cinnamon, nutmeg and cloves. It is a dried berry of an evergreen tree found in the Caribbean and Latin America. Use the dried allspice berries in the pickling liquids for vegetables and fruits, brining spices for meats, mulling spices for hot beverages, and as an aromatic stew seasoning. Mexican cooks add allspice to pipián rojo, the rich pumpkin seed sauce for chicken. In Peru, hot chocolate is simmered with fragrant cinnamon sticks and allspice.
